Seco de Pollo, served at a small restaurant on La Ronda in Quito. The origin of the term Seco is a mystery that no Ecuadorian has been able to explain to me. The word literally means "dry," but this dish is a combination of stewed meat, rice, potatoes, and salad. There are many varieties, but Seco de Chivo, or "Seco of Goat," is the national dish of Ecuador.
