After a day trip and hike to the Chimborazo volcano, I got back to Riobamba and I was hungry. I went out in search of a late lunch, but it was Sunday and the streets were deserted. I couldn't find anything open, except a few small kiosks that had sweets and snacks. I really wanted something more like a meal. Then I came around a corner and stumbled upon the Mercado Mariano Borja. This large marketplace featured hornados, one of the most traditional of Ecuadorian dishes. It consists of marinated pork, which is roasted in wood-fired ovens, sliced, and served with mote (hominy corn), potatoes, and a lettuce and vegetable salad. Hornados can be found throughout Ecuador, but the true home of this traditional dish is the city of Riobamba.
