There are many species of lupine in Ecuador. One of them, Lupinus mutabilis, was domesticated by pre-Incan inhabitants of the Andes more than 1,500 years ago. The edible beans, which are known as chochos, are highly nutritious and used in soups, stews, and ceviches in the highlands of Ecuador.
